500 g white chocolate, chopped fine
1 tbsp vanilla extract
2 tsp salt

1. Warm the milk in a large pan until steaming, then take it off the heat entirely.
2. Add the chopped white chocolate in three goes, whisking each addition smooth before the next.
3. Stir in the vanilla and salt — considerably more salt than you would expect.
4. Pour into a warmed airpot and whisk before each pour.

Tips

Off the heat, in three additions. White chocolate seizes easily and a large volume seizes all at once.
Two teaspoons of salt in 2.7 litres sounds wrong and is exactly right. Without it this is unbearably sweet at scale.
Chop it finely. Large pieces of white chocolate sink and scorch.

Variations

Dark chocolate for the regular box at $25.49, which is meaningfully less sweet.
Add peppermint for a seasonal version, at half the extract you would use with dark.
